wet ingredients
2 eggs
2/3 cup oil
1 cup honey
1 tablespoon vanilla
1 tablespoon apple cider vinegar
dry ingredients
2 cups oat flour
1 cup oatmeal
3-6+ tablespoons cinnamon
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
vegetables
1 orange, zested
1 cup grated carrot
1-1 1/2 cup grated zucchini
mix dry ingredients in a large bowl
whisk wet ingredients in a small bowl
pour wet ingredients over dry
stir until just combined
add vegetables and combine
bake at 350 degrees in mini muffin tins until cooked through,
10-15 minutes
yield: anywhere between 12 and 24 muffins,
depending on how much batter you eat
